Adhirasams is verydelicious, healthy, tasty, crispy  from outside and softer inside. Its seems to be difficult but very easy only if you follow my steps completely. Adhirasam is liked irrespective of age. Adhirasam is one such traditional snack which can be presented to relatives. It almost never expires. Lets see what to be done to  such a traditional crispy adhirasam.

Ingredients:

let's see the list of ingredients you need to make adhirasam.

  1. ponni pacharasi rice(good quality rice) - 500 gms
  2. jaggery - 300 gms
  3. kashkash/ somphu (sesame seed) - 1 tsp
  4. water - 50 ml
  5. cooking oil - for deep fry.

Method for making rice flour:

  1. Now take measured rice of 500gms. first, rinse the rice once, then transfer to the bowl, add water till immersing level soak for at least 5 hours, then spread it in a cloth and set aside for 5 - 10 mins under the fan.
  2. the rice should still have moisture content in it, when you press it with your hands it should not stick to each other. 
  3. transfer it to a mixer jar and grind it to a powder, it should be very fine.
  4. now transfer this to a seiver then sieve in it, do not discard the coarse particles, grind it again and again till you get smooth and nice rice flour.
  5. now your rice flour is ready. now let's get started adhirasam dough preparation.

Method for making adhirasam dough:

  1. Add jaggery into a pan with 50 ml of water. Boil to dissolve and strain the jaggery water to remove dirt and sand, again boil the jaggery water.
  2. keep stirring until it is thick. keep checking the syrup by pouring on a plate containing water. First, the syrup will dissolve in water when poured. At one stage when added few drops of syrup it will not get dissolve in water. It will standstill. Now gather it with your hand. It will form a loose ball more like a jelly. This is softball consistency, it will easily slide from your hand, yes! this is the right stage you are looking for.
  3. Then pour jaggery syrup to rice flour little by little till the adhirasam dough becomes like a chapati flour dough consistency.
  4. Now set aside adhirasam dough for 5 hrs in room temperature.

  5. You can make up to 20 small dough balls, then take polythene sheath, apply oil over it.
  6. Take a ball keep it over polythene sheath and flatten it with your fingers. It should be slightly thick.

  7. Take oil in a pan (enough to immerse adhirasam fully). oil should not be fuming hot. lower the flame when you drop the adhirasam, as it will get cooked quickly. 
  8. Carefully drop one adhirasam. It will first float at the top then slowly it will puff up, carefully flip over and cook in slow flame till it becomes golden colour on both sides. Do not cook on high flame.
  9. Adhirasam is ready, now serve hot and crispy adhirasam and enjoy.
