what is kheer?

Kheer is usually referring to made with rice. kheer is Indian rice pudding made with only basic ingredients like milk, rice and sugar which are readily available. and it is commonly made all over India.

One of the important table during Ramdan during Iftaar by Muslims. It is also common sweet for all Indian Festivals and Functions.

It is very easy to make that it take no time to get ready to serve to guest or friends that suddenly shows up. It is Indian tradition to serve our guest sweets for which this is the best and quick recipe to serve.

BADAM KHEER/ BADAM HARIRA


WHAT YOU NEED TO MAKE BADAM KHEER?


INGREDIENT:
  1. Badam (almond) - 12.
  2. Seeraga samba/ Basmati rice - 2 tbsp.
  3. Milk - 1/2 litre.
  4. Ghee - 1 tbsp.
  5. Sugar - 1 cup.
  6. Cinnamon - 1
  7. Cardamom - 2
  8. Badam/ Pista to garnish.

HOW TO MAKE BADAM KHEER?

DIRECTION:

  1. Take Badam and Seeraga samba then immerse in water for 2 hrs.
  2. Remove the skin of the Badam.
  3. Grind Badam and Seeraga samba rice nicely in a mixer grinder.
  4. Take a pan add the above grinded Badam mix and then add milk, cinnamon, and cardamom to it, in high flame. keep stirring till the consistency becomes little thick.
  5. Then add sugar to it and stir well.

For garnish:

  1. Take a pan add Ghee and Finely chopped Badam/ Pista till light golden.
  2. Garnish with badam/ pista.
  3. Serve hot or cold enjoy authentic kheer.

NOTES:

  1. Stirring is important through out the cooking process, If not kheer will form lumps.
  2. Instead of seeraga samba/ basmati rice you can use wheat and seeraga samba rice in equal proportion (1:1), But i prefer Seeraga samba rice.
  3. You can immerse Badam in warm water also, if you want to prepare it soon.
  4. If you like the kheer to be thick like gruel, add another 2 tbsp of rice to it.
